I recently brewed a Founders Dirty Bastard extract clone that I found on HBT. In the thread no gravities were listed. My OG = 1.067 which I thought was a little low but had already cooled and transfered. I pitched one packet of Safale US-05. I checked the gravity today (2/14, 9 days later) and got a gravity of 1.019. This brings the ABV to 6.4. The actual commercial beer is an 8.5%, and someone in the thread mentioned 7.6%. So should I pitch one more packet of US-05. There is still a small amount of CO2 coming through the airlock at this time. Thanks
 
i'd let it ride until you have a stable FG. on pack is a little low for that OG, but not all that much. 1.019 is a pretty decent FG for an extract brew. see if it's still 1.019 in another couple of days.

This. In my reading and (limited) experience, it seems to me that the answer to your question is "Not necessary" about 80% of the time. Either something in the process is off (1.020 extract wall, for example), in which case it's too late, or the yeast is still chugging along, in which case it'll get there eventually and why waste $6?

It seems the two main reasons for adding yeast (again, in most cases) are: 1) for bottling a high gravity beer that's been in secondary for more than 6 mos, or 2) when the original yeast is dead or otherwise defective.
