I have had 6gal of chockcherry wine and 6gal of plumb wine in carboys since early Oct. If my SG. readings stay the same am I gaining anything by not bottling. I would like my carboys back but am willing not to bottle if the wine will age better in a carboy than bottle.

I keep my wine in carboys for a relatively long period of time, compared to beer. My chokecherry is no where near ready to be bottled, but I recently bottled my sour cherry wine from 2007 cherries.

If you have any lees at all, you shouldn't bottle. That "stuff" will end up in your bottle. If you can go 60 days without dropping any lees, the wine is clear, and the FG is at the correct FG and stable, then you can bottle. I am of the belief, though, that bulk aging is ideal and if you can cold stabilize one winter before bottling, that's even better.
