I've done some searching and have found a lot of conflicting info, so I'm looking for some advice on my specific situation. This is only my second batch so I still have quite a bit to learn..
I purchased a Witbier kit from Rebel this week. When I received the kit, the 5.5 lb bag of DME was busted open in the corner. About 1lb of the extract was all over the box. I got in touch with Rebel Brewers and they are sending me a new bag of DME. Of course, they are not interested in me sending back the opened bag, and the 4.5 lbs of remaining DME I have is still in good condition. I'm really brewing this at my wife's request and was already planning on modifying this kit a bit to make a little bit bigger beer (this one had on OG of 1.051 and estimated ABV of 4.9% to start) and this gives me a good opportunity to use the extra DME.
Here's the recipe I'm thinking of -- feel free to tear it apart and tell me all of the things I'm doing wrong
10 lbs Wheat DME
1lb Orange Blossom honey
1oz Tettnanger 4.5
1oz Hallertau 4.3
1oz Bitter Orange Peel
.4oz Coriander
.2oz Cinnamon stick
Safbrew WB06 - dry (came with Kit) OR Whitelabs WLP380 - liquid (if I can find it at one of my local shops)
I plugged this in to a couple of recipe calculators and looks like I could be looking at an OG of around 1.92, IBU around 8.94 and an ABV around 9%. I'm not AS concerned with matching a particular style on this recipe, just want to make sure it tastes good!
I have a couple of specific concerns: 1. With all of the fermentables, will the 2 oz. of hops and other spices balance out the sweetness enough? 2. Will either of these yeasts be strong enough to start the fermentation if I use all of the DME in the initial boil or should I do a medium sized boil first, and add the rest of the boil a few days after fermentation has started (haven't heard of this method before, but saw it while searching for answers).
