Hi guys im having a little trouble deciding my grain bill for a 5 gallon batch of sipa, not sure if using maris otter to have a malt backbone or is it too much with carapils and the flaked wheat, I'm planning mashing on the low side(150-152 F), this is my recipe so far
Aiming for:
OG:1.040
IBU:56
Safale 05 for yeast

6 lb of 2 row
1.5 lb maris otter (Maybe remove this an add more 2 row?)
1 lb flaked wheat
8 oz carapils
4 oz victory

For hops
Fwh .6 oz centennial
Whirpool: .4 oz centennial, 1 oz simcoe, 1 0z mosaic
Dry hop: 2 oz simoce, 2oz mosaic.
 
I'd just go with all Maris Otter instead of the 2-row. Some malt character is nice in a session IPA so the beer doesn't just become hop tea.
 
^Agreed. The danger with session IPA's is you don't want them too watery/thin. A slightly more complex malt bill will help out immensely. Start with Maris Otter, maybe add in some victory, flaked wheat, and maybe even flaked oats.
 
I am on the fence of brewing something like this (see below), but wondered the same question you had. I'm on the fence with subbing in some Maris Otter or Vienna, for the 2-row. Maybe a 50/50 split...

Bitter Beer Face Session IPA |*India Pale Ale

Ingredients:
For 5.5 gallons (20.8 L)
• 9.0 lb. (4.08 kg) domestic pale malt
• 8.0 oz. (227 g) dextrin malt

• 1.0 oz. (28 g) Warrior, 16% a.a. (60 min.)
• 0.5 oz. (14 g) Chinook, 13% a.a. (60 min.)
• 0.5 oz. (14 g) Columbus, 15% a.a. (10 min.)
• 0.5 oz. (14 g) Columbus, 15% a.a. (knockout/whirlpool)
• 1.0 oz. (28 g) Columbus, 15% a.a. (dry hop 1 week)

• White Labs WLP001 California/Wyeast 1056 American/Safale Us-05 Ale Yeast

Specifications:
• Original Gravity:*1.047
• ABV:*4.5%
• IBU:*86
• SRM:*5.3
• Boil Time:*90 minutes
• Efficiency:*75%

Directions:
Mash at 152°F (67°C) for 60 minutes.


Extract Version:
Substitute 7 lb. (3.18 kg) pale malt extract syrup for the pale and dextrin malts.

I love Maris Otter as a base malt. When I mix it with 2 row I go about 50/50. That is more due to my frugleness - Maris Otter costs more. So I "dilute" it on some recipes to save some $$.

If you use all Maris Otter, I would drop the Victory, it would just get lost in the mix and I am not sure I would want the biscuit/bread flavor in an IPA, muddying up the hop flavors.
