So my first batch is on it's 6th day of fermentation in a glass carboy, and the airlock is slowing down. It's now down to about 1 bubble every 45 seconds. I used concentrated fruit juice and 2 cans of apple juice, but I didn't have a hydrometer at the time. I have a hydrometer now, but is it pointless to measure if I don't have a reading from the start?

I don't care about taste, however I do care about safety and cost. To avoid buying bottles and everything that goes along with it, would it be safe for me to simply put this carboy in the fridge and siphon off a glass at a time until it's done? I'm thinking it will take me about 2 months to drink it all. I have another identical carboy, would it be better to siphon it all into there first? Are campden tablets a good idea for safety?

Yes, you can. Just if you don't want the expense, you could do this: Re-use old wine bottles, and just fill up to the top, and plug with a tasting cork, by hand. Keep in fridge.
Even cheaper? Reuse old 16oz soda bottles.
