I'm about to leave on vacation for a month and I want to brew one more beer before I go.

I'm running out of carboys and need to free one up so I can do a quick brew before I go.

Can I put a honey kolsch that has been in a secondary for 2 weeks into a keg under CO2 and leave it at room temperature (~65) while I am gone or do I need to refrigerate? My kegerator is being built so I have nothing else on tap and I want to leave it off while I am gone as to not suck electricity.

You sure can! In fact, a lot of people do just that. As long as you purge the keg of oxygen and give it enough CO2 to seal up tight you have a fine vessel for long-term conditioning. No need to keep cool or anything as long as you keep it in temps that you'd regularly keep unfinished beer. :mug:
