I purchased two carboys, and have two True Beer Kit setups (2 primary, and 2 Bottling jugs). I plan to do two krieks in the carboys, and since they take a year, can I utilize the True Beer Kit for short term beers? If so how? My local guy said I could just keep it in the primary. Could I follow the same instructions (Primary then Secondary) and move it to the bottling bucket? Or should I just buy a third carboy?
 
If you're conditioning it for a year you're going to need glass, oxygen diffuses through plastics. It's also not good to keep your beer on the yeast cake for that long as it leads to off flavors.

Understand that but am asking something different...it is in reference to the beers that take 3-4 weeks to ferment... Can I just leave them in the primary.... Or use the bottling bucket as a secondary or do I have to get another carboy for those? Sorry didn't explain myself properly. My issue is that my two carboy will be occupied for a year w the sours.
 
You can ferment in the bottling buckets, but personally, I wouldn't. Too much of a possibility of an infection. Also, if you use plastic to ferment sours, do not use them for non sour beers, or they can, and most likely will, become sour too.

As for leaving it in the primary, I'd say go for it. I never use a secondary anymore, and leave my beers in primary for four weeks.
 
Thx. My sours are going in the glass carboy s and the three four week non sours in plastic buckets...
