Second Fermentation Suspension in Bottom of Bottles

I am new to brewing Kombucha and just bottled my second batch. I used Meyer lemon and honey to flavor it. After around six hours I noticed a suspension in the bottom of the bottles and what looks like a tiny SCOBY already forming on the top. It just seems kind of fast for all that and this did not happen to my first batch. I am wondering what I did wrong.

Well I ended up straining it and doing a taste test after one day just to see what was up and it was delicious! Hopefully it was ok.
