I've done several AG Kits in the past and recently upgraded to 5 Gal batch equipment. I went solo on my last AG custom recipe for an Old Speckled Hen clone that despite hitting all targets with a crystal clear beer and perfect color, had the dreaded bandaids...I think it suffered from combination of chlorine and over-pitching yeast (used a 1.5L starter for a 1.054 SG).

My wife is not a huge IPA fan but recently enjoyed the CAPA from Fifty/Fifty Brewing in Truckee, CA (awesome beers and grub!), so I am trying to recreate with the below recipe using BS2. I'm trying to keep it balanced and hit the grapefruit and citrus notes of the CAPA. I've never used this many hops before, some of the varieties, or dry hopped. Any experience or advice is welcome. I don't want to over bitter, but definitely am going for grapefruit and citrus.

All critique, input and advice is welcome. I plan to brew on 2/15. I have not received the hops yet so don't know exact AA%. I also plan to purchase yeast at LHBS, so suggestions for alternates is welcome.

.50 oz Amarillo Gold (8.5%) - 60 min
.50 oz Centennial (10%) - 60 min
.50 oz Centennial (10%) - 30 min

Personally, I wouldn't use amarillo as a bittering hop, I feel does a lot more as flavor/aroma/dry hop. Other than that looks good.
 
Are you trying to recreate the CA pale ale or make it into an IPA? I haven't had the beer in a while but I believe its along the lines of Drake's 1500, lots of hop aroma/taste like an IPA but gravity and IBU of a pale. If you are trying to make something like it I would drop the gravity, and for hops do a small 60 min bittering addition then load up on the late hops with a good sized whirlpool addition. Per their site they use citra and el dorado but your hop combo looks good too.
 
Yes, my goal is an IPA with similar aroma/taste profile. I, too, saw they use citra and El Dorado hops. At time of creating the recipe I couldn't locate El Dorado hops and I want to try something other than Citra (great hop, tho).

For the aroma/taste profile I'm after, should I scale back dextrose and C60 to the 1.050 SG range to keep within Pale Ale style or forge ahead with current grain bill but focus more on late hope additions as suggested?

Thanks again for the input. I'll be at Fifty/Fifty again this weekend so I'll be sure to refresh my memory.
