Any way possible to make a scrimshaw clone?...just tried it recently and its a new fav of mine.
 
You could get close with WL029 kolsch yeast.It gives lager-like balance with that crispness on the back. But the best part is it's sweet spot of 65-69F! Then some lagering in the bottles in the fridge a couple weeks & they can be pretty good! I brew what I call "hybrid lagers" with that yeast. I use lager/pilsner style malts & hops as well.
