Hey community!

I brewed my first all-grain batch today, O.G. is at 1.055.

I boiled 1 ounce of summit hops for an 70 minutes
1 of cascade ounce for 20 minutes
and I wanted to add 1 ounce cascade(aroma hops) at flame off, let it sit for 15 minutes before cooling the wort.

For some reason I added the aroma hops when I turned off my stove, and proceeded to cool the wort mixture, I'm not sure how long it took, but I'm guessing around 20 minutes to cool the mixture to 75-80 degrees.

I'm worried as hell that there will not be any hoppy aroma, that it's going to be a bit too bitter due to the summit hops. Should I rack to secondary and dry hop an ounce of cascade or do you all think it's all right if I just brew it as normal(I normally don't rack to secondary)?

Thanks Community!

Mike

I always dry hop APA's, so I vote yes. You don't need to use a secondary though. Just toss some in the primary as you near the end of fermentation.

thanks Bill, I originally wanted to go with a lower AA boiling hop, but for some reason I saw summit hops and decided on that(AA of 16%). The beer has an IBU of around 84.

I'm thinking of just letting it sit in the primary for 3 weeks, and if the bitterness hasn't mellowed out just rack it to secondary and let it age for a couple more weeks and taste again to see if it mellowed at all. At that point I'll dry hop with 2 ounces of cascade hops.
