I am brewing a fairly straightforward wheat beer. It's part American wheat and part Witbier. It's fermenting steadily but I can't help but want to experiment a little. I'm tempted to take a gallon or two of it and do something crazy with it to experiment. What do you think I should do? Is there anything you've thought of trying but haven't gotten around to yet?

Here were some of my thoughts, mostly around the idea of a margarita/mexican food/beach vacation.

- wood chips soaked in tequila
- mexican spices like cumin, clove, cinnamon
- cocoa (chocolate and orange?)
- chiles
- black tea

In case it helps, here's the recipe:
8# Wheat LME
1.13# Flaked oats
1 oz Willamette @ 60
1 oz Willamette @ 0
2.5 oz citrus zest @ 0
.5 oz coriander @ 0
4 teabags chamomile @ 0

US-05 yeast
 
Well, whatever you choose come up with an estimate of whatever ingredient per ur batch and divide by 4. A little goes along way with spices and such. Plus better to have a hint of something than over whelmed.
 
I agree with LMGK, a couple vanilla beans may be a nice touch. I don't know what hops you used (cascade for citrus?), but the orange may clash with the chili or wood chips... But, I am still a newb so take my advice with a grain of salt. However I think if you could get more diactyls it may be good with clove and cinnamon.
 
Thanks LMGK, both of those ideas sound good. I've never even considered white chocolate, but it sounds interesting. I could see how either could add a nice dimension to the beer, without making it become something too strange.
 
White chocolate is nothing more than confectioners sugar. There is no chocolate in it.
 
I don't believe that is quite right. I am fairly sure that white chocolate is cocoa butter, vanilla, sugar and milk.
 
You want to put that stuff on top of orange, coriander, and chamomile? Personally, I think you've put enough on that wheat. You'll end up just with muddy and indistinct flavors, IMHO. I admire your adventurous spirit. But I think if you want ot add oneof those flavors, you should start with a plain wheat, not an already flavored wit. Just my opinion.
 
Tektonjp - My thinking was that orange, coriander, and chamomile are the "base" flavors of a wit, so I wasn't going too far yet. I can understand where you're coming from though. Simple is good too.

Yes. I only meant that there is not any chocolate in white chocolate.
