Steppin up the brewing

After brewing nothing but ales for years mostly due to no extra space/time for a long Lagering I just picked up a second 7.0 chest freezer just for lagering

Looking forward to playin with some lager recipes

Its going to be a crisp lager drinkin summer :mug:
 
You should really look into the fast lager method. I have done if 3-4 times now and if you follow the directions as brulosophy writes them it works. People who say it dosen't work ALLLLL altered his instructions in some way or fashion. I even asked a brewer at one of my local craft brewery joints and he said the fast lager method absolutely works and even big breweries do it sometimes to pump out some volume.

Anyhow, you will have a lot of fun with the new recipes you can create its def something I enjoy brewing myself.

I have my second lager ever in a diacetyl rest right now. Both are using 34/70 yeast done according to the fast lager method. I thought that it only works for 34/70 yeast due to its wide temp range......Does this method work for every yeast??

I have 2 packs of WL840 in the fridge for my next lager but I think its only rated for 50 to 55 degs. How does that work with the fast method and a diacetyl rest at 68 while the yeast is still fermenting

My knowledge of brewing can't explain why it still works or how, but yes it does. I done two quick lagers with Wyeast 2308 smack packs and once with Saflager S-23 Dry Lager Yeast.
 
Glad for your new acquisition! Can't have too many freezers as this will keep your pipeline moving along with longer conditioning time for lagers.
 
Congrats!:mug: Having extra fermenting/lager space is a luxury. Icy cold lagers sure are nice on a hot summer day:D
