Hello all

I am back to brewing after a lengthy hiatus. I need to order all of my tools and material, but I need a Speckled Hen recipe to start.

My goal this year is to build a built in lager room/beer storage/wine cellar in my home office. I will probably use commercial refrigeration components (I was a refrigeration guy in another life).

I like great IPA's, White Ales, Speckled Hen Draught and when I can get it I lust for Pyramid Draught Pale Ale. I can't get it anymore so I will have to clone it.

Texas has a bunch of anti-beer labling laws which has kept the Brew Pubs to a minimum.

Hello.

I like Old Speckled Hen. It's an English Pale Ale Bitter type, isn't it? I tend to like the ones that are a bit maltier, like Fuller's ESB. At least, I think that is a related style.

What are the anti-beer labling laws in Texas that you speak of? There are microbreweries and pubs here. Special hoops to jump through?
