Hi,

I've been making cider for a few years now in glass carbouy's and got up to 20 gallons going last time. Now I've acquired 4 ~50 gal conical fermenters and am thinking of scaling up. Any thoughts from someone who has gone big?

Love to see your fermenters and know where you got them.

Right before the end of last season, I build a 30-gallon fermentor and had great success with it. I did three back to back fermentations, using the yeast from my fast ferment to start the 30-gallon fermenter. It saved me a lot of yeast and expense. Also going up in fermenter size saved me a lot of time.
 
Great to hear it. What do you use to hold for aging?

I have four of these 60 gal fermenters to play with....
I'm looking into yeast farming
