gonna try my hand at this cheese thang, but a beginner question (there will be more ). i bought the excellent artisan cheese making at home book and to hold my curds at temp i plan to get a thermal cooker-got the idea from this guy:

but to fit two gallons into a thermal cooker would be almost impossible and i don't eat that much cheese anyways. i plan to halve the two gallon recipes into one gallon. will this scale down properly, i thought i read someone say that it might be a problem? thanx in advance, eager to get started.
