I am going to be adding 5 lbs of mangos into the fermenter of my IPA this saturday.

I was thinking about using a little bit of vanilla extract in the blender when I make the puree. Would that properly sanitize the mangos enough to prevent an infection? I figure the vanilla flavor will be nice as well and cheaper than buying vanilla beans.
 
I would wait 4 or 5 days after you pitch your yeast and add the purée. Personally I would add a few shots of cheap vodka in place of vanilla then purée. You can always add vanilla later but I think it’s easy to overdo vanilla.

Once the yeast has built up a healthy population, it’s pretty well protected.
I’ve done plenty of meads where I just throw the fruit in primary and secondary without sanitizing.

Btw- your beer sounds like it’s gonna be delicious.
 
If you freeze your fruit a couple of days, thaw, you should be good to go.
