I have everything except the grains of paradise. Anybody brew a clone without this ingredient? Is there a suitable substitute? Does the beer truly require it or is it good without it?

any ideas?

Then do without. No big deal.

Will it be drinkable without? Absolutely! Will it taste like Sam's? Maybe not. So? It might even be better;)
 
Corriander may be a good sub for grains of paradise.

Blue moon is a similar beer in some respects and it uses orange instead of lemon and corriander instead of grains of paradise. Good luck. I'm t-minus two weeks until I tap my SA Summer Ale clone and the grains of paradise are still overpowering the beer a bit so you might be better of without them.
