Hello... I plan on brewing a Saison that I will age for about 9 months on Apricots and Brett and I'd like to get some opinions on my base build.

Abv 7.4% SRM 4 IBUs 44

10lb Pilsner
4lb Wheat
12oz flaked oats

.5 Simcoe at boil
.5 Nelson at boil
.5 Simcoe last 5
.5 Nelson at flame out

I plan on adding both Wyeast 3724 and Brett B along with the Apricots... Maybe some oak as well. How are we looking?

I'd say the grain bill looks ok. I'm not sure how the hops will come across with a saison yeast. What times are you adding them to the boil? And what mash temp are you going for?

If it were me, I would probably ferment it, then transfer it on top of the apricots so you don't lose the aroma during primary fermentation.
 
Oak and apricot seem out of sync to me. I'd do one or the other...
