You can darken the room and set a flashlight on the lid aiming down. You can see the kraeusen ring that way, without exposing the beer to air.

Did this, and sure enough, the yeast is working away. Must not have something sealed up the tightest.

Curious, what is the best room temp to be fermenting at? My basement is around 60-62 degrees, or I have a main floor bathroom that was added onto my house years before I bought it, that heats like ****. That room is usually 65-68, depending on if the dryer is running. Given, the dryer is a ways away from where the beer is, but I'm sure it fluctuates the temp in the room a bit when it's running.

Just me...but I almost always use 05 at 67*, so I would use the main floor bathroom. :mug:

That's where I've got it at now, spent the first 4 days closer to 60-62 degrees, then moved it to where it is now. The last thermometer reading I did had the ambient air temp near the bucket at 67 degrees.

I'm a believe in controlling beer temperature - not ambient. During some of the more active fermentation, beer temp can be 5 - 10 degrees above ambient. As it slows down, there's much less difference, so the beer's cooler. And that's when it should be warming up a little to finish the last few gravity points. A fermometer (stick-on thermometer) will give you pretty good idea of the beer temp. Without it, you're just guessing. I ferment US-05 at 66 or 67 during active fermentation, then raise it a few degrees.

My beer also ferments in a temp controlled environment, not ambient. I do just leave it set on 67* though.
