sack sweet attempt

I have done several meads before as my user name implies but i will try a 3 gallon sack sweet mead.


Should I use the white labs sweet mead yeast or


should i use something like R-2 or Qa23 yeast ?



I was thinking around 10.5 lbs [enough honey?] honey for a sack sweet 3 gallon batch.
 
I'd use k1v1116 and just make a normal level batch then step feed until the yeast poops out (18% ABV if you manage the ferment correctly).

That way its up to you how "sack" you make it.....

Make sure you add enough nutrients as well. Even more important with the sack strength ones I've found out.
