S02 and sulfites

What's the opinions here of using S02 on a orchard cider that has been uv pasteurized? I know that sulfites help control oxygen and microbes. Would you add prior to fermentation anyways or after?

If it's pasteurized, you don't need any pre-ferment. But it's still useful later in the processes to control oxidation, especially before bottling.
