S-189 how many? 1.089 gravity

6.5 gal batch. Pump went out on my brewzilla. I was able to siphon about 4 gal into carboy. First time brewing dopplebock. Hit 1.089

I have 4 packs.

Is 2 enough?

Also thinking about adding a gallon of water to make 5 gal. It's a lot higher than i aimed for. I had 72% efficiency in beersmith but my step mash looking like 85%

According to Homebrew Dads yeast calculator you need 485 billion yeasty friends and since there are approximately 200 billion in each packet, to be safe I would do 3.

It's likely that S-189 will die well before you reach your intended final gravity. Best look up the datasheet for that strain.
I also have 4x Saflager 34/70.... kinda thinking of using that dry yeast.

I made a dopplebock with s189 last year. My gravity and volume were a bit lower than yours (1.080 and 3G), but I pitched two packets, which might have been a slight over pitch, and the FG came in at 1.014. I did mash a bit lower than I had planned, because I was figuring it on finishing a bit higher. I would toss in a third packet.
 
I'm rehydrating 2 packs now and gonna pitch a 3rd pack on top of that. I'm also adding 1/2 a gal of clean water (boiled it).

Edit: fukin a.... BOTH my O2 cylinders are empty. I had to shake the carboy. I pitched 4 packs lol..... i haven't brewed a 5 gal batch in a while. 10 gal is always easier (routine) Lol ****

O2 isn't an issue with dry yeast.
