Rum newbie here…
Been doing a lot of reading but still confused.
You buy all that molasses and my thought is you run it through a pot still and to keep the flavors.
But consistently I see posts saying it’s coming off stills at 95%…
Didn’t these guys just make a Neutral spirit?
If so, is there that much flavor carried over?
If not, what should I be aiming for coming off the still?
I am running a 6 plate reflux that does 190 sugar wash consistently.
My thought is to take out 2 plates to knock my proof back.
 
Historically Rum is done on a pot still. IF you plan on doing a single pass i.e no stripping run, than yes for sure add a couple plates. I would personally not be running any more than 4 plates that's for sure but more likely only 2. All that having been said I wouldn't be doing rum on a reflux. Pot still only. Stripping run, toss foreshots, collect the entire run including rum oils and then run it again in the POT, again tossing foreshots and running slow collecting heads, hearts, tails and oils separately.
