I bottled my 1 Gallon batch of A Well Made Trippel from Brooklyn Brew Shop on Tuesday (3 nights ago). The recipe calls for 3 TBPS of honey mixed w/ 1/4 cup water as the priming solution. I am still learning this wonderful hobby, so I prefer to use 2 liter plastic PET bottles. This way I can easily gauge the carbonation level and avoid bottle bombs.

So I felt the bottles last night and they are rock solid...I am pretty nervous about them exploding, and think if they were glass, they would have already. I am thinking that 3 tbps of honey was too much since it was much less than 1 gallon (evaporation plus, I didnt want to siphon the slurry, so I left a little bit of beer in the carboy.

My question is - Can I open each bottle and release a little air pressure from these bottles w/o compromising the beer? I have another week and a half of conditioning, so they are certainly not ready to drink yet.

Soda bottles can withstand much more pressure than a beer bottle, so you might be ok. I'm not sure how many volumes of CO2 3tbsp of honey translates into, however. I think someone with beersmith might be able to answer this.
 
I know this is an old thread, but in looking at this I'm starting to think Brooklyn Brew Shop is a little irresponsible with their kits. When I calculated the priming sugar for a kit I did, it seemed like they were well above the norm with their 3 TBSP of honey. Add in that they have people blindly bottling 9% ABV tripels after two weeks without checking specific gravity(!), and I think they're one bottle bomb away from a big lawsuit.
