I am not a perfectionist when it comes to homebrewing, let's just start there. I'm willing to cut some corners as long as they don't sacrifice safety and still give me a good beer. To that end, I am trying to come up with an affordable setup for some new brewing equipment I hope to acquire:

1) 16 gallon brew pot with valve:

2) Dark Star 2.0 burner:

3) Riser for Dark Star 2.0- to be built or maybe purchased, design tbd.

The idea is to use this adequate 16 gallon brew pot with some modifications (I.e. a better false bottom than what they sell with the pot at Home Depot, some upgraded components) along with the tried and true Dark Star 2.0. I envision needing to raise the Dark Star burner so that I can reasonably drain my wort from the brew kettle into a mash tun and fermenters. Is this safe to do? Am I crazy to try? Has anyone done this? Is the Dark Star 2.0 adequate to heat ~14 gallons of liquid?

Your input is appreciated, thanks!
