All, trying to brew an Extract RIS Bourbon Barrell. I've brewed a lower gravity (og 1.060) Bourbon Barrell Stout before, but would like to up it a bit. Take a look at the recipe below and let me know what you all think of my plan!

Extract
12.2 lbs Munton's Light LME (6.1 lbs on brew day, 6.1 lbs ~1 week after pitching yeast)
3.3 lb Munich LME

Steeping Grains
1.5 lb British Chocolate Malt
1.25 lb Carafa III Malt
1 lb American Roasted Barley
1.25 lb British Crystal 60L

Hops
2 oz Williamette 75 min
1 oz Williamette 30 min
1 oz williamette 0 min

Yeast
Safale US-05 (X2)

Extra's
Black Swan White American Oak Honeycomb (Soak in 2 cups Bourbon for 1 week and add bourbon + honeycomb to the fermentor for about 1.5 weeks)
