Hi guys

I am looking for a malt extract kit to make a nice Rickards white or Belgian moon taste a like for summer. I am pretty new to homebrewing and I have don't boil grains or mash. I have only used malt extract kits so that's what Im looking for. Maybe its not possible but im hoping for a point in the right direction. Or maybe someone knows of a kit I can use and I can possibly use a different yeast and/or add some orange peel.

I'm not familiar with those two, but there are clone recipes for many popular beers. Try searching Rickard's White Clone Recipe, or recipe kit. Same with Belgian Moon. You may find a commercial kit, or a recipe. Also check the recipe section on HomeBrewTalk. And of course, keep watching this thread for replies and suggestions. Maybe someone here has successfully cloned these. Whatever you do, keep us posted.
 
You need to get something like a Hoegarten (or Belgian wit) kit and add some orange zest at flame out.

For Rickards White:
- Wheat: Makes Rickard's Original White a smooth, pleasant-
tasting and easy-drinking beer. The unfiltered wheat
accounts for the beer's natural cloudiness.

- White oats: Lends a creamy touch for a silky smooth sensation on
the tongue.

- Coriander: Adds a fragrant hint of spice.

- Orange peel: Adds a hint of fruit and leaves a distinctively
refreshing aftertaste.

Belgian Moon is the same as Blue Moon, just a different name in Canada:
A wheat beer brewed with Valencia orange peel for a subtle sweetness and bright, citrus aroma. Blue Moon® Belgian White Belgian-Style Wheat Ale is garnished with an orange slice to heighten the citrus aroma and taste.


If you want to try getting the ingredients for yourself, here is a quick stab at a recipe (I make no claim that this will result in a beer that is similar to what you are after):

For 5 US Gallons:
4 lbs Wheat DME (or 5 lbs wheat LME)
2 lbs Light DME (or 3 lbs light LME)
1 ozs ground Coriander added at 5 minutes to go
Zest of 2 oranges added at 5 minutes to go.
1 oz Saaz (60 min)
1 oz Saaz (15 min)

Yeast (from Northern Brewer Hoegarten clone recipe) DRY YEAST: Fermentis Safbrew T-58. Optimum temp: 59 - 75F. - LIQUID YEAST OPTION: Wyeast 3944 Belgian Wit. Optimum temp: 62-75F. White Labs WLP400 Belgian Wit Ale. Optimum temp: 67-74FWit Ale. Optimum temp: 67-74F

This is just a guess at a recipe that might give you what you want. Anyone else have any recommendations to improve this?

This is a VERY long thread with lots of discussion about Blue Moon Belgian White.
I was involved in the first production brew of this beer in 1995.
I give the recipe used at that time.

Through out the thread are updates and refinements of the recipe for homebrewers.
I think there is a variation for extract buried in there somewhere.

The recipe in the above post will be okay with some changes. Use Hallertauer hops only at 60 min. No 15 min addition. DO NOT USE BELGIAN YEAST. The whole idea behind Blue Moon is using a clean yeast instead of the estery Belgian. Use US-05.
