What should I look for in a regulator, I like stout and ales, heard there was difference for each..Wanting to set up 3 taps at least to start..

The only difference would be if you want to dispense a beer using Nitrogen or a Nitrogen/CO2 blend (beer gas), just like Guinness or Bodington's. Most beers are dispensed using CO2, though. If you wanted to do both, you'd need a regulator for each gas tank. Otherwise, you'd just need a regulator for your CO2, along with a splitter to send gas to each keg.
 
Stout taps have perforated plates in them to generate the tight foam head. This requires higher pressures, but if you just used CO2 there wouldn't be anything but foam, hence nitro. Initially, just setup standard taps and use champaign yeast to finish your stouts.
