I like to put one in the fridge overnight to check carbonation. If it's good, I put however many beers I'm planning on drinking the next day in the fridge. Usually, I like them in the fridge for 24-48 hours at least before drinking.

If the first one isn't completely carbed up, I just put one in at a time until it is. Then, usually 5-6 or so at a time for the next day.
 
I've been told by others that 48 hours allows the CO2 in the headspace of the bottle to dissolve into solution. Therefore, the carbonation/head might suffer if you simply flash chill it in the freezer which I always have to end up doing.
