I went to my lhbs and they gave me a recipe for redds apple ale. This is what the told me,

-Boil 2 lbs of corn sugar for 5 min

-Turn off stove and add a American light LME and stir til disolves

-Cool wort and add to fermenter and pitch yeast

- add a bottle of apple flavoring at bottling/kegging

-and a 12 ounce frozen 100% apple concentrate at bottling/kegging

My question is don't you want to boil the LME for At least 30 min? Or does that sound all right?
 
two things jump out to me: first, the 12 ounce apple juice concentrate for bottling. it's a little high and will give you very heavily carbed beer. 8 ounces would be more like it.

second: there are no hops. i've never had redds apple ale but i assume it has at least some hops.

That's a good point on apple juice. I'm not sure about any hops he said that if I don't boil the extract that's what gives it hops. I know redds apple ale taste just like apple juice though. I'm just concerned about not boiling extract
 
boiling is more for the isomerization of hops

a couple minutes above 180° is enough to kill any bad stuff in your extract. no real need to boil if there are no hops
 
Just to let everyone know, I just kegged and tasted this recipe. I left in primary for a week then transferred to secondary for another 12 days (just to open a primary up for another beer)

Not enough apple flavor letting it sit and see in a week or so.
