I'm brewing an American Wheat (50% 2-row, 50% wheat, citra hops) and am wanting to get it super clear. Here's what I'm thinking:

Primary- 10 days
Cold Crash- 4 days
Add Gelatin- 3 days
Bottle Condition- 4 weeks

I've read on the forum some people add gelatin, then crash; others crash then add gelatin.

Thoughts?
 
I have used clarity ferm to much success. It is a product that reduces haze and also removes gluten with no effect on flavor. Just add it when you pitch the yeast. Also Irish moss in the boil. Those two along with gelatin should do the trick. I think you would cold crash last.
 
There is a yeast strain for kristallweizen. It's wyeast 3333 I think. In any case, you can just use gelatin and it will be super clear. Bottle conditioning will produce more yeast and might reintroduce a haze.
