I'm drawing up plans for a DIY fermentation chamber and I'm looking for input on must-have features, and nice-to-have features from those who have already been there!

Easier to implement stuff now than to modify it later.

My plan so far is to build a wooden box on castors big enough to fit 3 buckets/carboys, lined with hard foam insulation panels.

  • I have a spare A/C unit on wheels I will use for cooling (connected via dryer ducting)
  • I plan to use a lightbulb in a paint can for heat (if needed).
  • Temp controller on Amazon with a probe, and separate 10A relay outputs for heat/cool.
  • Top will open in 2 panels to reduce cool air escaping
  • Temp probes for each bucket to verify actual temps vs ambient

Am I missing anything?
 
I put a drain in the bottom of my first chamber so I could wash out blow-offs, but that is mostly because I didn't have room for an additional blow-off jug.

Looks good to me. Maybe gaskets around the lids and a latch to hold them down? Also, a small fan that could help circulate the air when you need to heat (which probably won't be very often)?
 
I have a dehumidifier in mine. Little baby one but it helps keep things nice and dry and it is rechargeable. When a new carboy goes in the temp control always goes nuts and there is a ton of moisture

I was planing to use a latch like you'd find on a guitar case or tool box (don't know the name...) to get some compression.
The fan is a great idea too - could wire in parallel to the light. Not sure how often it would get used, but not expensive to include in any case.

My last brew I had some kraussen get up into the airlock, so I'll have to leave a bit of space for a catch-can for blowoff tubes.

That's a good point, maybe I'll line the bottom with something to catch and drain condensation.
