Hey Everybody,

I've finished my first brew and it's just about through with fermentation but I'm already looking towards my next brew. I'm looking for a good English ale or a great IPA. Does anyone have any good recipe ideas?

A really simple yet delicious beer is an ESB. If you are brewing extract beers try something like this:

1 lb Simpson's Medium Crystal steeping grains

6 lbs Maris Otter LME
2 lbs Light DME

Boil for 60 mins with the following additions:

1 oz UK Target @ 60
1 oz UK East Kent Golding @ 20 min remaining
1 oz UK East Kent Golding @ 5 min remaining

Pitch with a few packages of either Wyeast 1968 or White Labs WLP002

For the all grain version, replace the extract with 11 lbs Maris Otter malt.

Thanks for the post. I currently ferment in my basement where it's 68 to 70 degrees. I use a "swamp cooler" but that impossible to maintain a temp short of babysitting it all day. Do yout still recommend that yeast strain? I used wyeast 2124 last time but thst is a lager yeast.

I rotate frozen water bottles (24 oz. polish drinking water - tall and slim is perfect), two at a time, twice a day. It keeps the temp in the mid to low 60's.

Cheers!

English ales are my favorite! Here's the Bitter I keep on tap:

(5 gallons)
2.5lbs Maris otter
2 lbs 2-row
0.5lb english medium crystal (C40 or C60 if you can't get it)
0.5lbs special roast

0.5oz WGV 0.5oz EKG at 5minutes, bitter with an english hop to ~15-20IBU

Mash hot and fast, I like 160 for 30 minutes for the best body
WLP002, or, if you can get it, WLP025

Check your recipe. This is like 1.3% ABV.
