I have the following hops in my freezer now that I'm looking to use:
2 oz amarillo
2 oz citra
1/4 oz zythos
1/4 oz german hallertau

My last few batches have been a couple of APAs, a kolsch, and an american wheat. I'm looking to do something with these, but all I'm coming up with are APAs and IPAs. I'm ot sure I'm feeling those right now, but I'm leaning towards an IPA, or continuing to refine my APA recipe. Any other ideas?

I do 3 gallon all-grains and 5 gallon extracts, and I can also pick up any of the common hops at the local shop too if needed.

Base grain, maybe some crystal or roasted malts, I like brown ales. Throw them all in, at ? timing, and see what you get. I have made a couple of Black IPA's. Maybe a Brown IPA??
 
hmm...If you were limited, or just using what was left around, I'd opt to use the Zythos and a bit of amarr. as the bittering, use the remaining amarr. in the 20 and 5 min and the citra as a 5min and dry hop. For the beer I'd opt for an APA or BPA generic base, maybe a little crystal 20L and some wheat if you are planning on a BPA. Sit tight on the Hall. for another project, maybe let it age for use in a lambic or flanders in the future.
 
Thanks for the ideas. I'm not a big fan of brown ales, but maybe some sort of IPA would be good. I still have a bit of a black IPA I brewed, so what about a rye IPA? Any reason these wouldn't go well with rye?

Well, not IMO, but only because I like the spicy bit I get from the rye and I think the citrus of the amarr. or the fruity of the Citra would overshawdow it. That being said, it would not make for a bad flavor, I just don't think it would highlight the rye and make it a waste. A Rye IPA using the Wyeast French saison would be a good choice though, I always get a lot of clove from it when I brew in the 75'ish temp range.
 
Yeah, I started to think that same thought as I drank a rye IPA last night. The spicyness is pretty subtle and I think these hops might overpower this.
