Hi all. I've never used hops or grain before, but recently discovered an recipe that was made in ye olden days in Cornwall, called Swank. It's ingredients combine hops, brown sugar, raisins, ginger and salt. I was wondering if the addition of a caramel malt (60l) would complement this recipe? Any thoughts from the pros? Would there be a clash with the ginger? As there was no specifics involved in the ingredients, I've gone for 'Goldings' Hops, Demerara sugar, California sun dried stoneless raisins and Muntons premium gold ale yeast.

The only fermentable is sugar.

Does not resemble a recipe for beer.

Salt? No thanks

You got a link to the recipe? Not finding Swank as a Cornish drink anywhere.
 
yeah is there anything aside from brown sugar that is fermentable? Because that sounds more like a spiced liquor. Im guessing you would need something like a whiskey yeast to ferment it
 
Yeah it's not a 'beer' recipe, simply something that used to be made as a regional drink. I'm not really sure what you'd call it! I'm just experimenting with old recipes and was interested in your input. I guess the salt was used as an additive to prevent spoilage when water and sanitatization were poor. I was going to omit it but thought I'd do a gallon of it in and a gallon of it out and taste test.

Dogfish Head brews a beer with raisins called Raison D etre but not sure how much fermentables you get out of the raisins.
