Hey all,

I'm going to be starting up a batch of brew to take to a couple of annual Halloween parties this year. I was thinking of doing a dunkelwiesen but wanted it to stick out. Then I realized that I think I could match the flavor profile with one of our favorite desserts: Monkey Bread. I'm trying to compile a recipe and would like your input. (Partial Mash - 5gal. batch)

Grains:
3.3# (1 can) Wheat LME
2.25# Wheat
1.25# Dark Munich (20°)
10oz Biscuit Malt
5.25oz Chocolate Malt
4oz Victory Malt
+12oz brown sugar at flame out

Yeast: WLP Belgian Wit (already have some waiting)

Hops:
1oz Saaz @60
.5oz Saaz @15

Secondary:
1 vanilla bean
1.5 sticks cinnamon
 
Monkey bread, huh? I am a huge fan of dessert beers and I admire your tenacity in attempting to create a beer that replicates the flavor of a dessert with so many components. I am currently in the process of creating a banana split beer myself, so I feel you on the complexities of something like this, especially the first go because you have no idea how it's going to come out. That said, I think you've got a decent first try there, but just like with mine, I wouldn't expect it be what you envision first time out. The only thing I would change is to take out the late hop addition. You don't want the hop flavor to interfere with the other flavors you're trying to get in there.
 
Awesome. I just think it'll be so different, you know? Plus... Who doesn't like monkey bread?! I'm also planning an oatmeal raisin cookie stout in a few months. I'll keep you posted if you'd like.
 
I would definitely like to stay informed. I tried to do a chocolate chip cookie stout a couple years back that didn't turn out so great. It was still a good beer, but not at all what I wanted. I notice you're not too far from my neck of the woods. Maybe we could trade samples of our dessert beers and others if you'd like.
 
From Honolulu??? It's a bit of a drive... Haha. I'm down. If all goes according to plan, I want to host an octoberfest next year with a bunch of brews.
