I am still pretty new to brewing. I have 3 extract brews under my belt, got bored and decided to go all grain. Now I have 2 all grain brews under my belt and thought I would try my own recipe. Trial by fire I suppose. I would like to get some input from some hardened veterans such as yourselves.
I used brew target since I am still a rookie. According to brew target I am basically in range except bitterness which is at 23.2.
Ferms:
-5.5 lb White Wheat (Briess)
-5.0 lb German Pils 2 row
Mash @ 152 for 60 min
Hops:
-Amarillo .75 oz @ 60 min
-Amarillo .25 oz @ 30 min
Dry Hop:
In Secondary?
-Zest of 2 softball sized oranges
-Zest of 2 lemons
-1 tsp sage
-1 tsp coriander
I am torn on the yeast as I have read some threads suggesting ale yeast. Any ideas about the yeast I should use and when I should dry hop the zest and spices? Planning on brewing this on Sat.
