I am still pretty new to brewing. I have 3 extract brews under my belt, got bored and decided to go all grain. Now I have 2 all grain brews under my belt and thought I would try my own recipe. Trial by fire I suppose. I would like to get some input from some hardened veterans such as yourselves.

I used brew target since I am still a rookie. According to brew target I am basically in range except bitterness which is at 23.2.

Ferms:

-5.5 lb White Wheat (Briess)
-5.0 lb German Pils 2 row

Mash @ 152 for 60 min

Hops:

-Amarillo .75 oz @ 60 min
-Amarillo .25 oz @ 30 min

Dry Hop:
In Secondary?

-Zest of 2 softball sized oranges
-Zest of 2 lemons
-1 tsp sage
-1 tsp coriander

I am torn on the yeast as I have read some threads suggesting ale yeast. Any ideas about the yeast I should use and when I should dry hop the zest and spices? Planning on brewing this on Sat.

Don't know if you're doing BIAB or multi-vessel AG. If you're using a mash tun, you might want to add a cup or so of rice hulls. Not needed if you're doing BIAB.

Recipe sounds good. I've used ale yeast with wheat beers with good results. Or you could try a Kolsh yeast.

I'd put in the zest and such about 1-2 weeks before bottling/kegging.
 
your recipe looks good, more a Belgian Wit - American Wheat hybrid ale, I use US05 for all my American Wheat beers.

I put my zest in a hop bag and add it to the last minute of the boil, pull the bag and put in my fermenter, and let it sit for the duration, I add the coriander in the last minute too. I read that boiling the zest will extract the oils which will kill head retention, I haven't noticed any head retention loss but just FYI. I find it does bring out more of the zest flavor... which may get lost in the Amarillo or may enhance the hops, I dont' know, I am interested in knowing how this comes out, wheats are my second favorite to brew.
 
Thanks for the input. I'm using all grain multi vessel. 5 gal kit from NB. I was torn on the yeast. Kinda want to keep it cheaper. So u think SF05?

US05 is what I use for my American Styles, I am sure someone else will recommend their favorite. I don’t use liquid so much, only if I am looking for a specific character will I use a liquid strain but I am finding that I can get what I am looking for from dry yeast with temperature control. Dry yeast is cheaper too, at least at my LHBS.

Your IBU's seem to be in range with your brew target, BJCP says American Wheat is 15-30 IBUs

When I plug your numbers into my excel formula, I get an IBU of 32.19, your OG will be around 1.035, I am set to 85% efficiency, the points for White Wheat are set at 4 and pilsner set to 37, do you know what points your grain is set to in your software and do you know your average efficiency? This will effect your OG which will effect your IBU.
 
I like Wyeast 1010 for my wheat beers. S-33 is ok too if you want a dry yeast, just needs a little more help with increasing the temp near the end of fermentation sometimes.

Reeberom, thank you… I found an error in my spread sheet where the ‘0’ was dropped from my wheat points, it should have been 40 not 4… Now I am getting near the same OG as you… 1.047 @ 6 gal, 70% efficiency with a 23.11 IBU, You are within BJCP style.

I started with a trial of BeerSmith and found I didn’t understand what I was doing, punching in numbers a watching things change, what good is this? I took the formulas in this link and created my own excel spreadsheet, used the numbers from BeerSmith and put them in my spreadsheet… I have a clear understanding of how each effects the other… At least I did, now I just punch in numbers and watch thing change, HA...
