Hi All,

I am about to brew one of my favorite beer clones, Brooklyn Summer Ale all grain. My question is about dry hopping or not. I love the grapefruity flavor it has however I am not a hoppy drinker. For hops this recipe is calling for .50 oz Cascade at 60 and 30 minutes and then a dry hop of 1 oz Cascade for two weeks. I don't like how that tastes at all. That beer is supposed to be very low hops and smooth and light tasting. Should I just not do the dry hopping or can I adjust the current hops to give me that grapefruity flavor that I love in this beer without it being hoppy. Thanks in advance
 
Dryhopping will not effect bitterness - it's all about aroma.

By hoppy do you mean bitter? The grapefruity flavor is likely all late hops, so saying you want it grapefruity but not hoppy doesn't really make sense to me. It is a beer that's quite low in bitterness though, they list 18 IBU. I would plug your recipe into a calculator and see what the IBU's come to, then adjust the 60 min addition down if you need to and keep the dry hop.
