Batch: 5.00 galAll Grain
Recipe Gravity: 1.068 OG
Recipe Bitterness: 31 IBU
Recipe Color: 35° SRM
Estimated FG: 1.017
Alcohol by Volume: 6.6%
Alcohol by Weight: 5.2%
Ingredients -----------
Maris Otter Malt 8.00 lb
Barley, Flaked 2.00 lb
Black Patent (British) .30 lb
Chocolate Malt (British) .50 lb
Roasted Barley .50 lb
piloncillo sugar .75 lb

hops: Willamette 4.4% 2 oz, Pellet, 60 minutes
wlp004 Irish Ale yeast 1.00 unit,
Recipe Notes: mash 150-152
ferment in the low 60's
 
I'd leave out the sugar and increase your base malt.

This is a matter of preference, but I would also mash a little warmer (154-156) to give a more full-bodied beer. Otherwise you might finish a bit dry.
 
I don't think 31 IBUs will hold up to all that grain, not if you want a bitter finish.
 
thanks guys, I have taken those into consideration! I also switched the black patent to Carafa 3.
