I'm using the following recipe for a pumpkin ale and need some help with interpretation. I understand hop additions when reading recipes such as when to add them, but I don't quite understand the grain bill.
1lb Caramel/Crystal Malt - 60L (60 SRM)
8 oz. Victory Malt (25 SRM)
7lb Light Dry Extract (8 SRM) (1/2 at start of boil, 1/2 at flame out)
1oz. Hallertauer Hops (4.8%) (60 min)
1.5 Tbs Pumpkin pie spice (5 min)
1 oz. Hallertauer Hops (4.8%) (5 min)
Are the crystal and victory malts meant to be steeped in a muslin bag prior to starting boil, and then adding half DME upon initiation and completion of boil?
I just want to be sure I understand the recipe.
On a side note, if i use real pumpkin in this recipe, when would I add it and would it be used in addition to or in place of pumpkin pie spice?
