Hello,

Im still pretty new and mostly lurk around for info. Ive done about 10 all-grain batches now and they all took off fairly quick except one Scotch ale that took three days. Well, the other day I split 10 gal of Indian Brown with a friend into two carboys and pitched S04. One took off in a few hrs and went crazy but Im coming up on 48hrs and the other has not done a thing. Im pretty confident in my sanitation and am going to wait for ~72hr before re-pitching if needed. My problem is I don't have any S04 on hand, but I do have a few packets of S05. Would it make a terrible difference using the S05? The LHBS is a ways away and I dont really have the time to run up there, but I would if thats my best option. Thanks!
 
I wouldnt't mess with it. Give it a week to 10 days and check your gravity. See where you are at. I have had beers ferment that don't look or act like they are fermenting but they do.
 
Yeah, i ll prob wait a week at tops and take a reading. Ill prob make a run to the LHBS ahead of time and grab another S04 just to be safe, incase i do need to re-pitch.
 
72 hours should be sufficient to see a change in gravity. If there isn't any, I would repitch. The S05 will give the beer a different character, might be a nice experiment to compare with your friend's beer.
 
Checked gravity yesterday and nothing, went ahead and pitched s05 last night..going good this am! Will be neat to see how the beers differ.
 
If you ferment them both close to 60, they'll both be pretty clean and taste the same. S-04 works fast and floccs like a champ IME, US-05 takes a little more time and will never completely drop out of the beer. I think S-04 doesn't attenuate quite as well, but that might not be noticeable. I'd say the biggest difference will probably be the clarity of the final beer. Let us know the result!
