For those that do secondary:

when racking from Pri to Sec,,, Your suspose to leave the "gunk" in the bottom of the Primary and not put it in the secondary. RIGHT?

i am pretty sure with all the reading i have done the gunk stays in order to help clear the beer in the seondary. but since today was my first, i firgured i would ask.

The trub that stays behind is part hop-stuff (if, like me, you use the hop pellets), part yeast, and part various other crap that floats around, I guess bits of grain and such?

If you really like your yeast you can "wash" it to get rid of the non-yeast stuff and keep yourself a permanent yeast colony for future brews. It's not that tough, but I have to go find the thread where they talk about how to do it.
 
you're going to get some "gunk" as you transfer but no big whoop.

congrats! you're making beer!
 
in my opinion. only secondary if it needs 2 sit longer than 4 weeks. anything less and a single stage ferment is fine
