Can I sanitize my secondary the night before I need to use it if I cover it with foil until it's time to use?

Alternately, can I store one-step in a gallon water jug overnight?

Store it with some sanitizer in it, then it will always be ready to go. I keep mine with star san in them with the carboy cap on. This is usually sanitizer from cleaning the primary. That way I don't waste it either.

This is also a good way to remove gunk around the top of the carboy. Give it a good overnight soak in sanatizer and it should remove most reside you cant get to without a good brush.

Sure, just store one-step at low temp.
