I'm making a new batch right now. Basically just a light pale ale with two cans of extract. Last time I made it with 1 oz of amarillo hops (1 hr boil), 3/4 oz of Strisselsplat (10 mins boil) and 1/2 of Sterling at the end of boil (Whitey's Gone Fishin Recipe from The Joy of Homebrewing).

Can anyone tell me if I used a lot more of Sterling (1.5 oz) at the end of the boil, do you think it would ruin it? I had an awesome Australian beer, Little Creatures Pale Ale and it has a nice hoppy finish (without the bitterness) and was hoping for my beer to have a little zing at the end.

It won't hurt it, just make it hoppier. Never a bad thing in my book. Dry hopping is when you put hops in the secondary after primary fermentation though.

So put in my normal half oz at end of boil then after the primary, pitch my last ounce in secondary. Got it.

If you want more hop flavor and aroma, and less bitter, next time try getting rid of the 60 min, and hop bomb for ibus towards the end (20 min and less additions)...uses more hops for the ibus, but way more flavor and aroma
