Quick question about End specific gravity

I'm brewing my first batch of beer and have a quick question about end specific gravity.

I pitched the yeast on Thursday night of last week. Friday morning, it was bubbling away. It bubbled over the weekend into Monday morining. Monday night and this morning there was no bubbling.

So, I plan on keeping it in the primary for another 2 weeks or so (for a total of 3 weeks), then bottling. My question is: Do I need to check the SG now or can I wait until bottling?

I'm not really worried about stalled fermentation since the bubbling time seems about right from everything I read. And, I don't want to risk contamination. Am I missing something else? Thanks! You guys are great!
 
Wait it out. Just because its not bubbling that you can see, that doesn't mean it isn't bubbling every so often when you aren't looking and even then, it doesn't mean it has stopped fermenting.

If you plan on letting it sit regardless, no need to risk infection by checking the gravity now. It'll be fine, so just sit tight.
 
I check mine at 2 weeks. They can get down to/close to FG at that point. Then let it sit 5-7 more days & check again. If you're not dry hoping,three weeks can be just right to bottle or keg. You don't loose as much hop profile by waiting too long to bottle,since bottling is at least 3 weeks added to total primary time. That's how long the hop oils have been in there.
