Quick Help Please- Do i Start Cider

Sorry for the basic questions here but I've got 1 hour to reserve some fresh pressed unpasturized juice - I'm in Quebec and it's apple season. I don't have the time to scan the forums like I normally do so I come to you all for quick advice.

1) is it as basic as buy the juice, add the yeast and crash/rack when reached target FG?
2) do i need additives with pure fresh juice?
3) if I am using S-04 ( it seems popular ) am I better at keeping it at the top of bottom of the temp range ( I have a freezer fermentation chamber)
4) anything else I should know about thats different than beer!

Any help is appreciated.

You might want to add campden tablets to the juice prior to pitching your yeast.
