So I started a cyser day before yesterday. It’s about 4 gallons but I realized I have enough room in the bucket with the must for another gallon of apple juice.

Is it too late to add another gallon?

Seems to be humming along fine and I don’t want to mess it up, but I also can’t imagine why this would?
 
I would let it go through the more aggressive part of the fermentation first, that way the extra head space allows for the foaming that often happens in the first 4 days. I would mix some more honey and juice together to the same gravity you started with. After you add it, it will finish fermenting with the rest without the extra foam and mess.

I would think it could stand to add a gallon of apple juice since I added so little honey?

That's actually high for a cyser. Usually 1.5 lbs per gallon is what I do and that gets to 13% ABV. You would be at 1.0875 ish with water and 1.138 with apple juice. Adding a gallon would bring that down to 1.120 or so... good idea.

Did you measure starting gravity?
