Questions on using Potassium Metabisulfite and Potassium Sorbate

Hi,

I need to add these to a hard root beer I have in the secondary, to stabilize it before backsweetening (I'll be force-carbonating and bottling).

I've read up on them and have the amounts for my three-gallon batch (one gram of Potassium Metabisulfite and five grams of Potassium Sorbate) and the timing (add Metabisulfite, wait 12-hours, add Sorbate, wait 24-hours, backsweeten). But I have a couple questions as I have not found specifics on making the additions:

1) Do you simply sprinkle the powders on, or do you dissolve them in a small amount of water first?

2) Regardless of how they are added, I assume I'll need to (gently) stir them in. Correct?

You will dissolve the powders in a little water or some of the liquid, put that in the keg, and then rack the root beer into it. No stirring.
